Seda kasutatakse toiduaineteis stabilisaatorina ja emulgaatorina, et parandada toidu tekstuuri ja vältida komponentide eraldumist. Tegemist on sünteetiliselt modifitseeritud ainega, mis saadakse looduslikust tärklistest keemilise töötlemise teel.
